Cahoots opened on Aug. 9 and gives Colville a sports bar experience along with a light menu…
Whether you know it or not, you’re in Cahoots. in fact, everyone is. “We’re in cahoots with our community,” Lane Spradlin, co-owner of Cahoots, said. “Everything we built is a bit of every person in the community. We’re all friends, we’re all family, we love everybody.” That attitude is reflected in the fresh but homey feel of the establishment.
Spradlin and best friend MaryKay Morris had wanted to start a business together for years – in fact, they even had a business plan already drawn up.
Things kind of fell into their lap one day when they went to Stephani’s Oak Street Grill for lunch and discovered part of it was for lease. It turned out that only the barber shop section was available, and things got even more interesting when the owner of Stephani’s was willing to lease the narrow bar section in the back of the restaurant.
Luckily, it turned out there was a huge room on the side of the bar.
“We knocked down walls, busted open windows, painted, cleaned from ceiling to floor – built all the tables – the whole Spradlin family participated – even the kids, all summer, helped,” Spradlin explained. “Our idea was for the working class of the whole county – to have a nice, clean and classy place to go – as a thank you to all of us hard workers.”
People have donated things to put on the walls; and giant Avista spools serve as tables. “Every day someone brings us something in and says ‘we’re so proud of you girls’,” Morris recounted. There’s a large 48-star American flag on the wall, courtesy of Spradlin’s husband’s grandfather.
Cahoots opened on August 9th with a menu of sandwiches, gourmet hot dogs and their signature charcuterie platter featuring meats, cheeses, fruits, crackers, pickles, nuts and vegetables. Cherie Sutton is in the kitchen, and she’s cooked, bartended and served for over 40 years.
If you’re in the mood for something that’s not on their menu, Cahoots has partnered up with Westside Pizza – who will deliver to the establishment for you – and Thai To Go, from whom you can pick up food and bring it in to enjoy with Cahoots’ ice-cold beer. And when they say ice cold, they mean it.
“We’re the only place that has glass pitchers that we freeze – we’ve got frozen mugs, frozen pitchers. All bottles and cans are put on ice all day, every day. That’s our thing because we love ice-cold beer,” Spradlin explained.
Cahoots is open seven days a week from 12 to 9 p.m. and is located at 198 2nd Avenue East in Colville.
